Grilled Peach and Spinach Salad

This versatile salad can also be served as a starter or side dish for four. Add 8 oz (225 g) cooked and sliced chicken or turkey breast to make it a hearty main meal. If you don’t have spinach on hand, substitute a combination of your favourite baby greens, such as mâche, arugula or romaine.

3 ripe peaches, pitted and cut into wedges
1/4 cup (60 ml) Newman’s Own Balsamic Vinaigrette Dressing
6 cups packed baby spinach
Quarter small red onion, thinly sliced
3 tbsp (45 ml) sliced almonds, toasted


1. PLACE peaches on greased grill over medium-high heat; grill, turning frequently and brushing with half of the dressing, until softened, about 3 minutes.

2. In large bowl, toss together spinach, red onion, remaining dressing and peaches. Garnish with almonds.
