Makes 2 servings
9 oz (250 g) mixed salad greens
1/3 cup (80 ml) + 1 tsp (5 ml) Newman’s Own Balsamic Dressing*
1/4 cup (60 ml) fresh blueberries
1/3 cup (80 ml) soft goat cheese
1/4 cup (60 ml) sliced cherry tomatoes
1 tbsp (15 ml) sunflower seeds
1 tbsp (15 ml) pumpkin seeds
1. Put sunflower and pumpkin seeds in a small sauté pan. Turn heat on medium and sauté seeds for about 3-4 minutes until lightly golden brown. Remove from heat and add 1 tsp of Newman’s Own Balsamic Vinaigrette. Set aside.
2. In a large mixing bowl, toss gently, mixed greens, blueberries and sliced tomatoes with 1/3 cup of Newman’s Own Balsamic Vinaigrette.
3. Serve immediately on chilled plates. Top each salad with toasted sunflower and pumpkin seeds. Garnish with goat cheese.
* Newman's Own Light Balsamic Dressing can be used as well
