Chicken Caesar Salad

Featuring Newman’s Own® Caesar Dressing

Makes 4 servings


2-3 chicken breast fillets (500g)
6 tbsp Newman's Own Creamy Caesar Dressing
1 cos lettuce, outer leaves removed
Handful of store bought croutons
40g shaved Parmesan cheese
2 medium tomatoes, sliced


1. Place chicken in glass or ceramic bowl. Pour 3 tbsp Newman's Own Creamy Caesar Dressing over chicken. Cover with plastic wrap. Place in refrigerator and let marinate for several hours or overnight. Remove chicken, and discard marinade.

2. Preheat oven to 200°C. Place chicken breasts in a baking dish lined with non-stick baking paper. Bake 30 minutes or until chicken is cooked through. Remove from oven and set aside to cool.

3. Tear lettuce into bite-size pieces. Place in a bowl with 2 tbsp of the dressing and toss to coat. Add croutons and cheese and toss gently to combine. Arrange on serving plates or a platter, then top with tomatoes. Slice chicken and place on top of tomatoes. Drizzle with remaining dressing.
